the beach is 15 hours away, and i can't be bothered to go looking for blood oranges, but i made my cebiche with some mahi-mahi i was going to broil this morning, and it was DELICIOUS.

yes, i know most boardies will quiver with nausea at the though of raw fish marinated in lime juice with chilies and onions... but the pleasure! the pleasure! i am high on it right now and i could fall asleep again.

^ this is a great recipe but a bit "slangy" (ajinomoto = MSG, the names of the fishes are local)

other than that, a trip to peru would do it-- most tourists flee to cuzco and macchu picchu, but the best food is on the coast.

oh, if you're an archaeology student you should manage to get there free or under some sort of educational excuse. the best cebiche is on the north if you ask me (caral would make a perfect subject for this, ha ha ha, but some 800Km further north is better-- chan chan maybe?).

it would not be 100% authentic but you'd get a good approximation.

the basics are fish, red onion, LIMES, and fresh chilies (oh, and salt)

you can add/subtract things (herbs, spices, ice, ginger, secret weapons)

My friend and his family are Peruvian and his dad will make a huge mixing bowl full of the stuff, and marinate it, and then HOARD it to himself for a weekend of feasting. that abstard! my friend and I have to sneak some out in a small bowl!@!!!!!!!!!!!!!!!!
